影/誰敢嘗豆腐乳加醬油百匯?香港知名點心由來曝光

Have you ever thought of using soy sauce and fermented bean curd to make a tasty dessert?

這個奇特的搭配是由香港知名甜點店「金譽手藝腐乳」共同創辦人Hugo Tsui想出的創意料理。

This unique combination was introduced by Hugo Tsui, co-founder of “Fuzizoue” (金譽手藝腐乳) — a famous dessert shop in Hong Kong.

在這項甜點中,傳統的中式調味料搖身一變成為美味的百匯(也譯作「芭菲」)。

In this unique recipe, traditional Chinese condiments are turned into a delectable parfait.

Hugo點出,「這兩種甜點:豆腐乳百匯和醬油百匯融合了中式和法式料理。」

“These two desserts: ‘fermented bean curd parfait’ and ‘soy sauce parfait,’ are a fusion of Chinese and French cuisine,” Tsui said.

他表示這兩種食材為百匯帶出黃豆的醇香和鹹味。

According to him, these two ingredients bring a mellow and salty soybean flavor to the parfait.

然而,打造甜點的完美比例卻耗費Hugo相當多的時間。

However, getting the proportions of the dessert just right took Tsui quite a while.

他解釋道,「我的靈感來自於我的祖母;她在我童年時期鼓勵我在豆腐乳上加糖配著吃。」

“I was inspired by my grandmother; during my childhood, she encouraged me to add sugar on fermented bean curd,” Tsui explained.

「我長大後便發現糖其實可以將腐乳中的黃豆味帶出來。」

“When I grew up, I found that the sugar actually brings out the flavor of soybean in the curd.”
